Ingredients:

For Gulab Jamun:

  1. 1 cup milk powder
  2. 1/4 cup all-purpose flour
  3. 1/4 tsp baking soda
  4. 2 tbsp ghee or clarified butter
  5. 3-4 tbsp milk (or as needed to make a dough)
  6. Oil or ghee for deep frying

For Syrup:

  1. 2 cups granulated sugar
  2. 2 cups water
  3. 1/4 tsp green cardamom powder
  4. 1 tbsp rose water
  5. A few saffron strands (optional)
For Garnish:

  1. Chopped Pistachios or Almonds

Instructions:

To make the Syrup;

  1. Heat the sugar and water in a large saucepan over medium heat, stirring constantly until the sugar dissolves. 
  2. Add the cardamom powder and saffron strands (if using) and bring the mixture to a boil. 
  3. Reduce the heat to low and let the syrup simmer for 5-6 minutes until it thickens slightly. 
  4. Turn off the heat and stir in the rose water. 
  5. Keep the syrup warm on the stove while you prepare the gulab jamun.


To make Gulab Jamun:

  1. Mix the milk powder, all-purpose flour, and baking soda in a mixing bowl. 
  2. Add the ghee and mix it in with your fingertips until the mixture looks like breadcrumbs.
  3. Add 3-4 tablespoons of milk and mix until a soft and smooth dough forms. 
  4. Knead the dough gently for a minute or two until it is soft and pliable. 
  5. Be careful not to over-knead the dough, or the gulab jamuns will turn out tough.
  6. Divide the dough into small equal-sized balls, about the size of a marble or a small walnut. 
  7. Roll the balls between your palms until they are smooth and without any cracks. Repeat until all the dough is used up.
  8. Heat the oil or ghee in a deep frying pan over medium heat.To test if the oil is hot enough, drop a small piece of dough into the oil. If it sizzles and rises to the surface, the oil is ready.
  9. Carefully add the gulab jamuns to the hot oil, one by one, and fry them until they are golden brown all over. Make sure to turn the gulab jamuns in the oil so that they cook evenly.
  10. Once the gulab jamuns are golden brown, use a slotted spoon to remove them from the oil and place them on a paper towel to absorb any excess oil.
  11. While the gulab jamuns are still hot, drop them into the warm syrup, making sure to coat them well. Let them soak in the syrup for at least 30 minutes before serving.
  12. Serve the gulab jamun hot or cold, garnished with chopped pistachios or almonds. Enjoy!
