How To Make Gajar Ka Halwa | Carrot Halwa Recipe

Gajar Ka Halwa also known as Carrot Halwa is a popular dessert dish in India made from grated carrots, milk, sugar, and ghee and sometimes flavored with cardamom and dry fruits. 
It is a rich and sweet dish, typically served during special occasions and festivals.

Cooking time: 45 minutes

PREPARATION

  • THE CARROTS: Peel, wash, and grate.
  • THE KHOYA: Grate.
  • THE NUTS: Blanch almonds and pistachio, cool, and remove the all. Split almonds, and cut pistachio into slivers.
  • THE RAISINS: Soak in water.

COOKING

  • Boil the milk in a kadhai or pot, add the grated carrots, reduce or cook into medium heat, and cook, stirring constantly until carrots are tender and most of the liquid has evaporated. 
  • Add the sugar and stir until dissolved and the liquid has evaporated. 
  • Then add ghee and bunny for 3-4 minutes. 
  • Remove, add cardamom, and stir.

INGREDIENTS

  • 1kg/2¼ lb Carrots
  • 1litre/ 4 cups Milk
  • 200g/ 1 cup Sugar
  • 100g/7 Tbs Ghee
  • 5g/ 1 tsp Green Cardamom powder
  • 60g/2 oz Khoya*
  • 20g/3 Tbs Almonds
  • 10g/4 tsp Pistachio
  • 15g/5 tsp Raisins

TO SERVE
Remove to a silver bowl, and garnish with Khoya, almonds, pistachio, and raisins. Serve hot.
